Ingredients
  

  • 400 g Potatoes Peeled & sliced
  • 120 g Soy mince Dry, soaked & drained
  • 1/2 Onion Small, chopped
  • 1 tsp Olive oil
  • 1/2 tsp Smoked paprika
  • Salt
  • Black pepper To taste
  • 180 g Silken tofu
  • 120 ml Soy milk Unsweetened
  • 2 tbsp Nutritional yeast
  • 1/2 tsp Garlic powder
  • 1/2 tsp Turmeric
  • Salt To taste
  • 40 g Vegan cheese Grated

Equipment

  • Knife
  • Cutting board
  • Large pot (for boiling potatoes)
  • Non-stick frying pan
  • Blender
  • Mixing spoon or spatula
  • Baking dish (oven-safe)
  • Measuring cups & spoons

Method
 

  1. Preheat oven to 190°C.
  2. Boil sliced potatoes for 8–10 minutes until slightly tender, then drain.
  3. Heat oil in a pan and sauté onion until soft.
  4. Add soy mince and cook until browned.
  5. Season with paprika, salt, and pepper.
  6. Blend tofu, soy milk, and seasonings until smooth.
  7. Layer potatoes and soy mince in a baking dish.
  8. Pour sauce over and top with vegan cheese.
  9. Bake for 25–30 minutes until golden and bubbly.
