- Heat olive oil in a large skillet over medium-high heat.

- Stir in cauliflower rice and cook for about 5 minutes until tender.
- Return the cooked shrimp to the skillet and toss everything together.
- Drizzle with fresh lemon juice and stir well.
- Garnish with chopped parsley and serve immediately.
