Ingredients
  

  • 12 oz Spaghetti uncooked
  • 6-8 medium Ripe Tomatoes chopped
  • 3 tbsp Olive Oil
  • 4 cloves Garlic minced
  • 1 small Onion finely diced
  • 1/2 cup Fresh Basil chopped
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 1/4 tsp Red Pepper Flakes optional
  • 1/4 cup Parmesan Cheese grated, for serving
  • 6-8 leaves Fresh Basil for garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve ½ cup pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add chopped tomatoes, salt, pepper, and red pepper flakes. Simmer for 12–15 minutes until the tomatoes break down into a sauce.
  5. Stir in the chopped basil and cook for 1–2 minutes.
  6. Add the cooked spaghetti to the sauce and toss until evenly coated.
  7. Add a splash of reserved pasta water if needed to loosen the sauce.
  8. Continue tossing for 1–2 minutes until the pasta absorbs the flavors.
  9. Serve topped with Parmesan cheese and fresh basil leaves.

Notes

For the best flavor, use very ripe tomatoes and fresh basil. Don't forget to reserve some pasta water before draining, as it helps create a silky sauce that coats the spaghetti perfectly.
